Raspberry lemon crush mocktail recipe

Celebrate summer with our thirst-quenching, summery drink (or mocktail) that not only tastes delicious, it sparkles with festive colours too!

Ingredients (makes around 6 glasses)

2 cups fresh or frozen raspberries

¾ cup filtered water

½ cup lemon juice

¼ cup honey

1 bottle soda water, lemonade or ginger beer

Ice cubes

Fresh mint leaves

Method:

  1. Put raspberries, honey and water in a saucepan and bring to a gentle boil
  2. Reduce heat and simmer for 5 minutes, stirring until the fruit has softened and collapsed
  3. Remove from heat, add lemon juice, stir and leave to cool
  4. When the mixture has cooled, strain through a fine sieve to separate the fruit pulp from the syrup.
  5. Fill glasses with ice cubes and spoon 3-4 tablespoons of syrup over the ice. Garnish with fresh mint leaves and raspberries
  6. Pour over the soda water, lemonade or ginger beer - the bubbles create a fragrant raspberry foam

Tips:
Use the back of a spoon to push the fruit pulp through the sieve
The fruit pulp can be saved as a delicious topping for desserts or yoghurt
