When the weather is hot and there's balmy evenings, you want something to eat that will cool you on the inside. Enter this ultra hydrating summer salad. It's wonderfully simple to prepare and only has a few ingredients, meaning even the shopping will be quick!
INGREDIENTS
Half a large watermelon (or a whole small)
Half a large cucumber (or a whole small)
1 red onion
Large handful of mint leaves
1/2 block of feta
Olive oil
Salt & pepper
METHOD
Dice watermelon and cucumber into small cubes and add to a large bowl.
Chop half a small red onion into thin slices and add to the bowl. Also crumble in the feta.
Finely shred the mint leaves and add them in. Add a tablespoon of olive oil and genorous grinds of salt and pepper.
Toss the salad gently with a wooden spoon and serve in bowls. This salad will serve 2 genourously.
