Allyl caproate is an aromatic chemical, usually appearing as a clear or pale yellow liquid with a sweet fruity odour, reminiscent of pineapple with notes of camomile and banana. It can be synthesized for industry by reacting hexanoic acid (a fatty acid found in many plants) with allyl alcohol (an organic compound found in garlic). Allyl caproate is also naturally present in baked potato, pineapple and mushrooms.
Allyl caproate can be used for its tropical-pineapple notes in the creation of fruity flavours and fragrances.
