Kick off your morning with these protein-packed pancakes! With only three simple ingredients, they come together in minutes - a blender does most of the work. These are fabulous made with a pea or hemp protein powder. A finished stack will serve up around 30g of protein, which will help keep you satisfied and full.
Ingredients
- 2 - 3 Tbsp pea or hemp protein powder, to reach your desired batter thickness
- 1 ripe banana or around ⅓ cup mashed
- 2 eggs
Method
Heat a fry-pan over a medium to low heat. Drizzle oil.
Blend together all ingredients. The mixture should be a thick pourable batter. If it’s too stiff, add a splash of water. If it’s too runny, add a sprinkle of protein powder. You’re after a thickness where you can pour it into a pan and it only spreads a little.
Pour batter into a milk jug - the pouring spout will help you get perfect pancake circles!
Pour the batter into the pan in circle portions. Leave to cook until golden in colour or you can easily flip it with a spatula. Repeat on the other side.
Enjoy! Serve with fresh fruit, yoghurt, maple syrup or whatever else you like.
